Chai Latte

Autumn is definitely here... Even though yesterday still felt like spring , one day was chill another day was 23 deg warm. That might be the answer why I haven't found any fall leaves around the house yet, what a strange. It must be different with autumn in another side of the world which mostly have spooky feeling of autumn .. pumpkin, ghost, halloween and all sort of things.

As the days grow shorter we spend our evening and night time in the living room watching movie and other activities. Except yesterday, hubby set the telescope outside, watching the beautiful moon on the chill night with kids... lol..

Well after taking long break from blogging, here is I started with a chai latte recipe, good enough to warm up your cold evening.

I do love the fragrance of the spice as I do enjoy the latte in my warm living room. The fragrance filled my fridge yeah I left it open ... This is really simple recipe you should try it. Though, as I always put one tsp sugar on my cup, I slashed the sugar for this recipe to half cup.

Chai Latte
serves two
1 cup brown sugar ( I only used 1/2 cup )
1 cup brewed back tea
1 whole nutmeg, crushed
4 cinnamon sticks
10 cardamom pods
4 star-anise
2 cups milk
ground nutmeg, to serve

1. In a saucepan, combine sugar, tea and spices, stir over low heat until sugar dissolve. Bring to the boil over a high heat. Reduce heat to low and simmer for 4 minutes until syrupy.
2. Meanwhile, place milk in a microwave-safe jug. Microwave on high (100%) power for 2 minutes. Using a hand blender, froth milk (on the surface only)
3. Strain syrup into a jug . Place 2 tablespoons syrup in each glass. Top with milk and sprinkle with nutmeg to serve.

Soursop Concoction

Once time ago on my trip to grocery shopping in Asian market, I stunned my self with a row of a cups with frozen soursop it reminded me back of Caese's posting about Es Manado which was really intriguing me. I planned to make es teler this time, so I bought 3 cups of them and keep it on the freezer for later use. The fact is... it's almost forgotten until we were talking about food from this region, Manado, over the forum. Nice talk gals..


There are other version what's ingredients use in this concoction though. Some like to use avocado some like to put a dice of jelly from agar, I simply like it all white ingredients <^____^>.

I did prepare this fresh fruity drink on the backyard to welcome kids from school and hubby who picked the kids on his way from work. It was really pleasing them. This concoction absolutely a must for this summer.

Es Manado


1 cup of soursop seeded process in blender
1 cup of soursop seeded
2 cups young coconut meat with the juice
1 packet of nata de coco
1 can of lychee with the juice
1 cup of water
1/4 -1/2 can of sweet condense milk (or to taste)

Blend all ingredients in large bowl, leave on the fridge before serving.

Es Teler

Es Teler is Indonesian syrupy concoction of chopped jack fruit,young coconut meat,chopped avocado and creamy coconut milk topped with crushed ice. It's available here in Melbourne in some Indonesian restaurant called Es Teller 77. Somehow, every time we have this drink, I ended up in the need to make homemade one.

It's really easy to make since almost all ingredients are coming in a can. Except the avocado. Those canned fruit available in Asian shop. I added mine with nata de coco, a chewy translucent jelly cube also available in Asian shop come in plastic packet.

Es Teller
1 can of young coconut meat in syrup
1 can jack fruit in syrup
1/2 cup creamy coconut milk, microwaved until just boil and set aside to cool
4 chopped avocados
1 packet Nata de coco(optional)
1/2 cup sweetened condensed milk (or to taste)
crushed ice

Open all cans and reserve the syrup in a medium bowl, using kitchen scissors cut coconut meat and jack fruit in small size, mix all fruits, coconut milk and nata de coco in the bowl. Serve in glass topped up with crushed ice and sweetened condensed milk.

Chocolate Ice Cream Soda (revised)

Begitulahh… cuaca masih suka naek turun… naek turun… kadang dingin kayak gak lagi summer. Kadang panaaass banget kayak hari ini, 36 degress neh. Dinikmatin lha ...hehhehe...

Klo ada yang lagi kepanasan atau yang gak kepanasan lagi cari dessert bisa dicoba neh, Chocolate Ice Cream Soda, diambil dari bukunya What’s cooking Chocolate by Jacqueline Bellefontaine….. sluuuurrrrppp… langsung abis deh…

Chocolate Ice Cream Soda
Serves 2

- 5 tbsp chocolate dessert sauce (bisa pakek resep *glossy chocolate sauce, atau Choc dessert sauce botolan atau bisa juga pakek indomilk coklat lho)
soda water
- 2 scoops of chocolate ice cream
- double (heavy )cream, whipped
- dark or milk chocolate, grated

Glossy Chocolate Sauce:
60 gr/2 oz dark chocolate
4 tbsp golden (light corn) syrup
15 gr / ½ oz/ 1 tbsp butter
1 tbsp brandy or rum (optional)

To make the chocolate sauce, break the chocolate into small pieces and place in heatproof bowl with the syrup and butter.
Heat over a pan of hot water until melted, stirring until well combined. Remove the bowl from the heat and stir in the brandy or rum, if using.

Methode:

Divide the chocolate dessert sauce into two glasses

Add little soda water to each glass and stir to combine the sauce and soda water.

Place a scoop of ice cream in each glass and top up with more soda water.

Place a dollop of whipped heavy cream on the top, if liked, and sprinkle with a little grated dark or milk chocolate. (Kali ini aku gak pakek whipped cream, lagi keabisan :D, aku kasih meses yang warna-warni biar keliatan ceria meria…)
