A friend emailed me with the question, what's different between cupcake and muffin? I promised that I have good answer for that, from the article that I kept somewhere. Bad luck ! I can't find the article. :(
Here is I'm trying to distinguish between the two delectable foods, of course, please correct me if I'm wrong... ^_^
However, there is an excellent definition of the difference on the formula, courtesy of Diana's Desserts:
"A basic formula for muffins is 2 cups flour, 2-4 tablespoons sugar, 2½ teaspoons baking powder, ½ teaspoon salt, 1 egg, ¼ cup oil, shortening or butter and 1 cup milk. When the fat, sugar and egg ratio in a recipe reaches double or more than this, you have reached the cake level."

Cupcake
- Little cake
- Eat as dessert or treats on celebration
- Full of sugar
- Well decorated with icing or frosting or other decorations
- Have both flat and dome shape top, before frosting
Muffin
- Cakey bread
- Eat on breakfast or as a meal
- Full of nuts, fruity, healthy grain and some nutrients foods, well.. sometimes choc chips too
- Don’t need icing
- Can be both sweet and savoury
- Mostly have a dome shape (except English muffin)
- From the technical, muffin has less effort in the kitchen

ReplyDeletecupcakes are the little cakes which were described earlier to be baked in cups. English people used this method to bake their morning/afternoon tea delicacies. and as for todays, people invented tins which can be used to bake little cakes in them. they call it muffins. so and so, there's also development and probably improvement to make these two little cakes called differently. cupcakes are made from beaten mixture, just like sponge cakes. but we tend to make muffins from mixing them lightly.
